Diabetes Fund Cookbook Serves
Weight Watchers and Diabetics

A brand new booklet,
"Favorite Sweets — Just
Delicious and Sugar Free,"
is available from the
Juvenile Diabetes Founda-
tion.
Ida Ellenson, a member of
JDF, experimented for a
year with many sweetening
agents and baking methods
to find recipes for the diabe-
tic or anyone else concerned
with their intake of sugar.
The proceeds will go toward
diabetes research.
Mary Van Streain, a re-
gistered dietician at Wil-
liam Beaumont Hospital,
has provided the "ex-
change" information that
diabetics and weight
watchers must have.

The 28-page booklet,
with 41 recipes, has large,
dark print for easier
reading, and a "wipe-off"
cover. Included with the
recipes are helpful hints
and gadgets found useful
to obtain best results.

The publication of this in-
teresting book of recipes
and its guidelines for diabe-
tics was announced by Dr.
Leonard G. Wayne, presi-
dent, and Dr. Frank Reis-
man, vice president-
treasurer, of the Juvenile
Diabetes Foundation.

Kosher cooks are advised
to use substitutes for ingre-
dients which might other-
wise render the recipes
treife.
Exemplary in the book of
sugar-free recipes are the
following:

ROLLED CABBAGE
2 lb cabbage with large leaves
32 oz. unsweetened apple
juice
1 tsp pancake syrup artificially

sweetened

tsp salt
2 tbsp raisins
Remove core, place whole
cabbage In boiling water until
leaves are fairly soft.
Separate leaves, dry and set
aside. Cut small leaves into
fairly large pot, add apple
juice, syrup, salt, raisins and
set side.
1 lb. ground chuck
1 egg beaten
11/2 tsp salt, add to beaten egg
1 tbsp chopped onion
1 /4 cup instant rice cooked as
directed

Add all ingredients to meat
and mix well. Put one heaping
tablespoon of meat on edge of
cabbage leaf. Turn bottom end
over meat and then turn sides
and roll to edge of leaf. Place
edge side down in sauce. Con-
tinue until all leaves are used.
(If any meat remains, make
into balls and add to sauce
when it boils.) Place pot of rol-
led cabbage on burner and
cook covered at medium heat
for 45 minutes, then place in
preheated oven, uncovered
and continue cooking at 350
degrees for 45 minutes more. If
juice cooks down, you may
add some boiling water.
Freezes well. Tomato sauce or
canned tomatoes may be ad-
ded. Makes 24 rolls. 3 rolls
equal 1 bread exchange and 2
meat exchanges.

SWEET POTATO
APPLE BAKE
3 medium sweet potatoes,
baked, peeled and sliced 1/2"
thick
3 medium apples tart, peeled
and sliced 1" thick
Y4 tsp salt each layer
2 tsp brown sugar substitute
on each layer
2 tbsp margarine
In well greased casserole,
add enough hot water to just
cover bottom. Start with ap-
ples and alternate with sweet
potatoes. Dot each layer with 1
tbsp margarine, Y4 tsp salt and
2 tbsp brown sugar substitute.
Bake covered in 375 degree
oven for 30 to 40 minutes or
until potatoes are done. Raw
potatoes may be used but will
require longer baking. Makes 8
servings. 1 serving equals 2
bread exchanges and 2 fat ex-
changes.

BEETS WITH
PINEAPPLE
1 tbsp brown sugar substitute
1 tsp corn starch
tsp salt
1 cup pineapple tidbits
natural style unsweetened
1 tbsp margarine
1 tbsp lemon juice
1 lb can sliced beets (drained)
4 tbsp beet liquid
Combine brown sugar, corn
starch, and salt in saucepan.
Stir in pineapple (with juice).
Cook stirring constantly till
mixture thickens and bubbles.
Add margarine, lemon juice, 4
tbsp beet juice and beets.
Cook over medium heat 5 mi-
nutes or till heated through.
Makes 4 to 5 servings. 1 serv-
ing equals 1 bread exchange
and 1 fat exchange.

GLAZED CANNED
FRUIT PIE
Two slices white bread
dried, toasted lightly and put In
blender. Add 1/4 tsp. cinnamon
and 2 pkg. of sugar substitute.
Blend well, add 2 tsp melted
margarine and mix. Pat into 8"
pie plate for the crust. Bake at
325 degrees for 5 min., cool.
Four cups unsweetened
peaches or apricots, drained.
To 1/2 cup of the juice, add 1 tsp
lemon juice and pinch of salt.
Dissolve 1 pkg of unflavored
gelatin in another Y4 cup juice,
heat both juice mixtures to-
gether and add sugar substi-
tute gradually to your taste.
Boil until dissolved, then cool.
Arrange fruit on crust and pour
cooled liquid over it. Chill till
set. Makes 8 servings. 1 serv-
ing equals 1 bread exchange.

BRAN MUFFINS
1 cup flour
3 tsp baking powder
1/3 cup sprinkle sweet
2 cups 40% bran cereal
1 1/4 cup skim milk
1 beaten egg
1/3 cup margarine melted
1/2 cup raisins
Stir together flour, baking
powder, and sprinkle sweet.
Set aside. Put bran cereal find
milk into mixing bowl. Stir to
combine. Let stand until cereal
Is softened, then add egg and
shortening, beat well. Add dry
ingredients and raisins to
cereal mixture, stirring lightly
only until combined. Fill small
greased muffin pan cups al-
most full. Bake in 400 degree
preheated oven about 25 mi-
nutes or until lightly brown.
Makes 24 muffins. 1 muffin
equals 1 fruit exchange and 1
fat exchange.

JNF Preparing
Land Projects

JERUSALEM (JTA) —
The Jewish National Fund
is preparing the infrastruc-
ture for 185 new settle-
ments, 22 of them to be es-
tablished in the coming fis-
cal year.
The JNF will prepare
23,000 dunams of land for
agricultural development
throughout the country, but
mainly in Galilee.
It has prepared some
248,000 dunams for agricul-
ture in the past five years
and planted more than 12
million trees.
