Kosher cooking can be enhanced with Carmel wines of Israel. Here wine is selected for the cooking, as well as to accompany the meal. One 21/2 to 3 lb. chicken quar- tered 2 tps. chopped onion 1 heaping cup fresh sliced mushrooms or 1 4-oz. can sliced mushrooms drained 1 cup Carmel Cabernet Sauvignon 1 bay ieaf,1 tsp. each to thyme and pepper salt to taste Yz taps. Instant blending flour 3 tablespoons water chopped parsley Place chicken In 12 Inch tef- lon pan, skin side down saute In Carmel Cabernet Sauvignon until golden brown. Then akin side up, continue sauteing until browned on both sides. Add onion, mushrooms, bay leaf, thyme, pepper and salt, cover and cook slowly 30-45 minutes or until chicken Is tender, turning and basting pieces occasionally. Remove chicken from pan, blend flour and water, stir into pan juices, simmer stirring sauce until it thickens. Taste and correct seasoning. Return chicken to pan, heat gently but thoroughly before serving. Serves 4.
