The 384-page project is being acclaimed as the most comprehensive work of its kind of Passover recipes. It is pointed out that many of the recipes can be applied for hametz usage. A special feature of the cookbook is a large number of "non-gebrocht" recipes for those people who follow this Passover custom. The book begins with a chapter on the seder plate, with a detailed de- scription on how to set it up, including a variety of ways to make haroset. The book has appetizer, salad, soup, dessert and be- verage sections. Almost every permissible Passover vegetable is featured in at least one recipe so that the cooking can be nutritious, as well as varied. Meat and poultry dishes are con- tained in a 63-page section. There is a variety of fish dishes, including cas- seroles, fish loaves, baked, stuffed, boiled and broiled fish. Rabbi Davis was ordained by the Hebrew Union Col- lege. He was assistant rabbi at the Euclid Ave. Temple in Cleveland, Ohio, and was spiritual leader at Temple Study Program on Holocaust -- The Flint Jewish Com- Adath Israel in Lexington, Ky. He was the director of the Hillel Foundation at the University of Kentucky and was the chaplain at the U.S. Public Health Hospital for drug addicts. He founded the Kentucky Committee on Desegregation and was active ft-I–efforts to desegre- gate the U-K. For many years Rabbi Davis was dean of the na- tional leadership training institutes sponsored by the National Federation of Temple Youth.
