A special benediction is
pronounced over a candle on
Saturday night. Some be-
lieve this is a reminder of
the scene on the first Satur-
day night of Adam's life. He
had not experienced dark-
ness because light was
available during the 24
hours of the earth's first
Sabbath.
On Saturday, when dark-
ness descended on the uni-
verse after the Sabbath was
over, Adam was frightened.
The Almighty then taught
him how to produce light ar-
tifically by rubbing two
stones together to create the
spark of fire and light.
The benediction is, there-
fore, now pronounced to re-
member this act of Grace
from the Almighty in teach-
ing sinful man who brought
darkness into the world to
rekindle the light of the
universe (Pesachim 54a).
Another opinion states
that the appearance of
this artifically made
source of light (i.e. the
candle) signifies the exit
• of the 'Sabbath because
during the Sabbath one
was forbidden to kindle .a
light. Kindling the light is
thus the first act of
"work" (i.e. creative
work) that is done in the
course of the week to
come.
It is also mentioned by
some that the use of light
garnered from Budapest to Boston,
complemented with more traditional
fare. Will you have room for the sweet
table, laden with cakes, tarts, cheeses

existence requires of the
Jew to be able to distinguish
between the two so that he
will be able to appreciate
the Sabbath as a distinct
day and not just another
day.
This is the model that is
used to encourage a person
to try and find the worth-
while things in life instead
of just taking every event in
life and every object in life
as a casual sight or occur-
ance.
The passage of time (e.g.
the transition from one
week to another at the exit
of the Sabbath) is an occa-
sion to take stock and ap-
preciate the value of each
element of life.
The candle made of dif-
ferent colors to remind a
person that the simple
white light is but a blend of
several distinctive colors,
each having its role to play
in the creative development
of life. It teaches us to have a
multiple view of life so as to
_ evaluate situations from
many different aspects.

This recipe comes from an
expert on the subject, Ber-
nice Lyons of University
City, Mo., who is a member
of the family which owns
Raskas Dairy Co. of St.
Louis, a large-scale man-
ufacturer of cream cheese.
Graham cracker crust
2 tbsps. graham cracker
crumbs
2 8-oz. packages cream
cheese
1 tsp. vanilla
1/2 cup sugar
3 eggs
1 pint sour cream or dairy
dressing
1 tsp. vanilla
1/4 cup sugar
• Lightly butter a 9-inch
spring form pan. Use your
cracker
favorite graham
crumb crust recipe. Press into
pan evenly. Beat cheese two to
three minutes on electric
mixer until smooth and fluffy.
Add vanilla. Gradually beat in
the V2 cup sugar, then eggs,
one at a time; beat/ until light
and creamy. Pour over crust in
pan and bake at 375 degrees
for 20 minutes.
Remove from oven and let
stand 15 minutes. Turn oven to
475 degrees. Stir sour cream
or dairy dressing with vanilla
and the 1/4 cup sugar. Spread
evenly over cheese cake. Sp-
rinkle 2 tbsps. crumbs over
top. Bake 10 minutes at 475
degrees. Cool, then chill until
serving time. The sour cream
topping will be soft while hot,
then becomes firm when cool.
Makes 8 to 10 servings.
