RESEARCH BY Jack Freed of Red Cedars, Tele- graph and Nine Mile, brings info about Monk Fish. According to Jack, Norm Swinkowski of O'Neil & Hoffner Fish, was in Chi- cago 2 1/2 years ago, tasted it and returned quite ex- cited... However, Norm had a difficult time having Monk Fish merchandised by many places. . . He even called to tell restaurateurs about it being the special of the ,day. Then came a local restau- rant show, tells Jack, and today it is one of the hottest seafood items on the mar- ket. He says his Red Cedars was one of the first 10 in, the state 1 1/2 years ago to sell Monk Fish. IF THE OWNERS OF a local restaurant had seen this they'd have shuddered with horror. . . One of their waitresses poured coffee for two folks who called her over and said they didn't want to drink it. . . She took their cups from the table, walked back and actually poured the coffee back in the glass container. . . in full view of customers. . . a great example of how to best ruin a restaurant!
