14 cup graham cracker crumbs
3 tbsp. sugar
3 tbsps. Parkay margarine,
melted
2 tbsps. lemon juice
1 tbsps. grated-- lemon rind
1 /2 tsp. vanilla
4 eggs (1 separated)
3 8-ounce packages Phila-
delphia Brand cream cheese
1 cup sugar
3 tbsps. flour
3 4 cup sugar
2 tbsps. cornstarch
1/2 cup water
y4 cup lemon juice
Combine crumbs/3 tbsps.
sugar and margarine; press onto
bottom of 9-inch springform pan.
Bake at 325°, 10 - minutes.
Combine 414 cup sugar and
cornstarch in saucepan; stir in
water and 1/4 cup lemon juice.
Cook until clear and thickened,
stirring occasionally. Add small
amount to slightly beaten egg
yolk; mix well. Add to hot mix-
ture; cook 3 minutes, stirring
constantly. Cool slightly. Spoon
over cheesecake; chill. Garnish
with lemon slices, if desired. 10
servings.

cheese, 1 cup sugar, flour, 2
tbsps. lemon juice, rind and
vanilla, mixing at medium
speed on electric mixer until
well blended. Add 3 eggs, one
at a time, mixing well after
each addition. Beat in remain-
ing egg white; reserve yolk for
glaze. Pour mixture over crust;
bake at 450°, 10 minutes.
Reduce oven temperature to
2501'; continue baking 30 min-
utes. Loosen cake from _rim of
pan; cool before removing rim.
