BUCKWHEAT LATKES
21/2 cups milk
1 tbsps. sugar
1 /2 tsp. salt
1 /4 cup Planters Peanut Oil
1 /4 cup warm water
1 package active - dry
yeast
4 eggs
2 cups buckwheat flour
Scald milk; stir in sugar,
salt and peanut oil. Cool to
lukewarm. Measure warm
water into large warm bowl.
Sprinkle in yeast. Stir until
dissolved. Add lukewarm
milk mixture, eggs', and
buckWheat flour; beat until
smooth. Cover; let rise in
warm place, free from draft
until bubbly, about 1 hour.
Stir down. Drop batter by
tablespoonfuls onto hot,
lightly oiled griddle. Cook
until lightly browned on both
sides. Serve hot with marga-
rine and syrup or sour
cream. Makes about 21/2
dozen pancakes.
