repeatedly rolled and fired
until they are crisp. a pro-
cedure that develops flavor
by releasing juices.
"Black tea is produced
mainly in India. Indonesia.
East Africa. Sri Lanka
(Ceylon). and China. Unlike
green tea. it is changed
chemically as well as phys-
ically in processing. The
leaves are withered to
remove most of their mois-
ture. then bruised and
crashed to break up their
cells and release juices and
enzymes. At this point. fer-

mentation starts.
Fermentation determines
the flavor. strength. body.
and color of black tea. Rela-
tively short fermentation
results in a less tart but
more full-flavored tea with
a deeper color. When the
leaves assume the charac-
ter the producer is after, the
fermentation process is
stopped with a blast of hot
air.

Awarded Grants

PHILADELPHIA—In a
national competition, two
scholars at Dropsie Univer-
sity. Philadelphia. were
awarded grants-in-aid for
post-doctoral research by
the American Council of
Learned Scienties.
Dr. Abraham I. Katsh.
president emeritus and dis-
tinguished professor of
research. and Dr. Theodor
H. Gaster, professor of com-
parative religion and Near
Eastern studies, were
among the 108 scholars
from 83 academic
institutions throughout the
U.S. selected in the com-
petition for grants to further
their post-doctoral work in
the humanities and related
social sciences.

sibility of forming a
national unity government
in light of the recent events
in the U.S. or, at least, to
make another attempt to
get the Democratic Move-
ment for Change to join the
present coalition.
It was learned that there
have been private‘talks with
some DML personalities on
this but the party leader,
Prof. Yigael Yadin, appar-
ently has not been swayed.
