theme at a renovated chaf-
ing-at-the-bit, raring-to-go
L'Auberge in the Somerset
Inn on Big Beaver in Troy.
Everything but the decor
is being changed ... nothing
indeed wrong with the com-
fortable French country-
style interior with its soft
sofas, heavy iron chan-
deliers, darkwood ceiling
beams and seating for
about 160 in two rooms.
Not to forget, of course,
the fresh flower at every
table.
Unlike many other
French-style restaurants,
you don't have to be uncom-
fortably dressed to enjoy
formal dining because
L'Auberge seems to ooze
with gracious informality.
The prices are certainly
not out of line for the triple-
threat offering of good food,
service and atmosphere.
But the best is yet to
come, according to new
Chef Jose Salaverri, recent
addition to the already fine
group at L'Auberge ... Chef
Jose's new ideas and dishes
not served anywhere in the
area will soon be a reality
. and a lot of customers
can't wait for it to happen
As good as L'Auberge is
now, Chef Jose says it will
be better ... and he has the
experience to back him ...
After 11 years in kitchens
arouncj, the world, he
achieved the very high dis-
tinction in 1969 of becoming
executive chef at the Nation-
al Press Club in Washing-
ton, D.C. ... Prior to corn-
ing here, he was head chef
at the Baltimore-Hilton.
Chef Jose's new menu
will retain much of its
French flavor in most
dishes ... but added will be
items for the most dis-
cerning gourmet to lift an
eyebrow or two in delight.
L'Auberge features a lot
of tableside cooking and
preparation ... like Ivan Ra-
violi mixing a Caesar Salad
at our table.
The new night manager
was off this evening, but
who doesn't remember
John Carmona from Darbys
and Francesco's? ... And
there is very popular
Stanley Hibner, wine stew-
ard and captain, at
L'Auberge, who has been a
15-year fixture for lunch at
the Standard Club down-
town ... Some folks say
Stan mixes the best Caesar
Salad anywhere.
Our waitress, \Jackie
Dupas, was a dandy ... smil-
ing, congenial, attentive,
and like a good waitress
shOuld do, making sugges-
tings for indecisive custom-
ers.
We enjoyed our meal at
L'Auberge ... Coquille St.
Jacques (scallops and mush-
rooms au gratin, on a bed
of mashed potatoes), de-
licious Chilled Cream of
Avocado Soup, Fresh Mush-
rooms, and Romaine
(Frieda had the Caesar
Salad), Zuchini A L'Ail, Cro-
quette Potatoes, Medaillons
.

of Veal L'Auberge (sauteed
veal in cream sauce with
mushrooms and calvados),
a delightful bottle of
Pouilly-Fuisse ... good cigar
and Jackie bringing us
fresh coffee in a clean cup.
The menu and 'name at
L'Auberge may look and
sound French, but there is
more of an emphasis on con-
tinental dining, whose popu-
larity, when good, is a gour-
mand delight ... And on
new Chef Jose's word mean-
ing something, it will be
good ... even better than
now.
L'Auberge is the kind of
place you feel relaxed at ...
If Chef Jose, John, Ivan,
Stan, Jackie and others who
work there have anything
to say about it, which they
certainly do ... you'll want
to return.
RUMORS THAT ANTOI-
NETTES on Telegraph is
not open are false...It was
closed a recent Sunday
(five days all told) due to a
death. in the fam-
ily...Antoinette and Jim
New are very much in busi-
ness.
The letters on a sign that
stated about being closed
because of a death, were
stolen by animals who call
themselves people.
