coffee through spent
grounds—repouring makes
the coffee bitter. Mix
brew—when coffee is first
made in an urn the heaviest
concentration is at the bot-
tom—drawing this heavy
coffee and mixing with the
rest gives the brew a uni-
form strength throughout.
Serve it fresh ... the long-
er coffee is held the less de-
irable it becomes—it loses
flavor and aroma as it be-
comes older—never hold
more than one hour. Never
reheat brewed coffee—it
breaks down the com-
ponents of the coffee and re-
sults in an undesirable fla-
vor. Rinse urn with boiling
water after each batch—
after each batch of coffee is
used, a thin layer of old cof-
fee remains coating all ex-
posed surfaces, affecting
the flavor of the following
brew. Use only one filter—
more than one slows the
drip rate and overextracts
the coffee, imparting an un-
desirable taste."
