AN ELEGANT TRIP into
a world of continental din-
ing adventure... coupled
with the meeting of old
friends and the children of
others.
Quite a combination for a
wonderful evening.
The elegant • adventure
was our first trip to what
has to be Detroit's finest
gourmet restaurant...La
Fontaine in the Renais-
sance Center's Detroit
Plaza Hotel.
The 145-seater is all in
one room, but gives the ap-
pearance of separate
areas...Decorated in deep
reds and burgundies, the
semi-circular alcoves with
golden mesh streamers
amidst indirect lighting
overhead provide a view of
a circular white marble
fountain softly bubbling
with water...accomodating
the personal likes of the
most discriminating.
Everything is done in ele-
gant taste...like the person-
alized matches at your
table...Kuno Fasel, execu-
tive assistant --director and
food and beverage head of
the hotel, who joined wife
Frieda and ourselves, is
Swiss-born, brought here
from the Johannesburg Car-
lton in South Africa...As
Kuno explained, his "wife"
is always with him as he
works 14 to 18 hours a day
and is very happily "mar-
tied" to higo job.
To start the evening off,
Sharon Winkler brought
Frieda a red rose to either
pin on or put in a silver
vase until she went
home...Imagine our sur-
prise when the person in-
troducing himself to wait
on us turned out to be
Kenny Schwartz, Trudy and
the late great caterer Her-
man Schwartz' son...He has
certainly grown to be a fine
young man...Kuno calls him
his personal protege.
Manager of La Fontaine
came: by and who should it
be but swell guy James
Moore, 30 years in the res-
taurant game, with expe-
rience ranging from waiter

6560 ORCHARD LAKE ROAD AT WEST MAPLE (15 Mile)
on the luxury train-car El
Capitan to managing at the
Shiawassee (present Shera-
ton-Southfield)...Jim left his
job as a butler in Franklin
Hills to manage La Fon-
taine.
Before dinner, we had a
bottle of Pouiily-Fuisse
brought to us by Madeline
Triffon, with wine-tasting
cup, around her
neck...Madeline is the
daughter of Chris Triffon,
who use to head the King's
Arms and Christopher's on
Southfield.
Then
came
din-
ner...served with elegance
from La Fontaine's own sep-
arate kitchen.
We started out with Le
Pate Canard En Gelee, a de-
licious duck pate made with
port wine and served with
golden aspic and melba
toast.
Then Jimmy Moore made
us an elegant Le Regal
Dungeness Salad...a compo-
sition of Dungeness crab
legs, sliced avocado, hearts
of celery, and artichokes
with a tangy celery seed
dressing.
Madeline then poured a
beautiful Cote de Beaune--
Villages red burgundy
wine.
Jimmy, indeed a master
of the flame, then made us
Les Mignons de Boef
"Madagascar"...two beef
mignons sauteed in butter
with Madagascar green pep-
percorns, flamed with cham-
pagne and served with saf-
fron rice.
Frieda has escargots with
a touch of Puilly-Fuisse in
them; Ld'' Creme Aux
Huitres "Bongo Bongo," a
soup that exquisitely blends
oysters, green peas, shal-
lots, cream and white bur-
gundy wine...It was de-
licious...nothing like we've
ever tasted before...Her
salad was La Salade Cae-
sar, made by Jim at our
table...and then he flamed
the entree...La Cote de
Veau "Robe du Soir"...veal
loin chop sauteed in butter,
crowned with moreli mush-
rooms, Greenpoint aspa-
ragus flavored with armag-
nac and enveloped in parch-
ment.
Then
came
dessert,
Kenny's favorite depart-
ment, so to speak, as he
rolled over a cart with
goodies to be had nowhere
else...La Fontaine main-
tains its own bake shbp,
also, with breads and pas-
tries coming from
there...We are not much of
a dessert eater, • but on
Eddie's cart was something
we just had to try...a choco-
late and pear torte "ala
Schwartz" which was
double lip-smacking good.
In the meantime, another
old friend, Eddie Malunda,
had poured us some more
coffee...So many folks will
remember smiling Eddie
from Hugo's on North-
western and 12 Mile.
Then Frieda had Coffee
Diablo, flamed at the table
by Jim, who has yet to
singe one hair on his suave
mustache...grand marnier,
brandy, cinammon sticks,
whole cloves and coffee
beans...poured into a glass
with edges rolled in sugar.
