ous areas, including a cock-
tail region, a totally
bricked separate bar-b-q
cooking room with three ro-
tisserie machines going at
all times, private dining sec-
tors and a completely sepa-
rate door and area for
carry-out...A huge kitchen
is being built to handle the
fast turnover and to main-
tain Tunnel's fine service
reputation.

Plenty of fresh fish will
also be served... (one of the
owners, Thom Racovitis,
states a firm refusal to use
frozen fish)...couple of
steaks, chicken, salads ga-
lore, an unusual bean soup,
ribs country-style from one
person up...and pastries
from Tunnel's own pastry
shop in Windsor.
Although seating will be
for 150 people, an intimate
atmosphere will be a prime
factor to go along with food
excellence.
In Windsor, between Tun-
nel Bar-B-Q and - TBQ's
Other Place, 4 1/2 tons of
ribs are used each week, ac-
cording to Thom...The De-
troit addition will make it
one of the world's largest
for a three-spot user... Tun-
nel alone now uses over
three.
A totally refrigerated
truck has been bought so
pastries can be brought
over daily from its Windsor
bake shop...The truck also
will be used for outside ca-
tering.
Tunnel Bar-B-Q here will
be open seven days a week
from 11 or 11:30 am...The
opening target date is still
unknown...but will definite-
ly be either the middle or
end of July.
The same kind of rotis-
serie bar-b-q machine used
since the original Windsor
Tunnel Bar-B-Q opened in
1947 will be spinning out the
ribs in fast fashion.
Just about everything is
on the line...an entire repu-
tation...so you know the
Tunnel Bar-B-Q on North-
western and 12 Mile won't
open until almost perfection
has been reached... Even
then, it'll still take a little
while...But not too
long...these fellows are real
restaurant professionals.
