FRESH FISH

BY NORNIA

The problem with Passover is
that many of us are left with a
good deal of matza that we don't
know what to do with. So here is
a Passover recipe that will bring
compliments at other times of the
year as well. It is a time-honored
recipe, having come from my
husband's grandmother.

4 matzot, crumbled
1/2 stick margarine (melted)
4 eggs
I large onion
dash of salt
Soak matzot in hot water
until soggy. Drain, add
margarine, and beat in
eggs. Grate in the onion
coarsely. Heat a little fat in
8-inch round pan and - then
pour in matza mixture.
Bake in 300 degree oven
one-half hour or until
brown.
