One reason offered is that the matza- is supposed to be the "bread of the afflicted" or the poor. A poor man does not eat all of his bread at once because he never knows if there will be any bread for him for the next meal. Thus, he breaks some off and saves it for the next meal. Others claim that this is done to arouse the curiosity of the children who see the irregularity of the pro- cedures at the Sader table and are thus stimulated to ask questions. Some claim that taking the piece of matza and wrapping it in a cloth simulates what the Hebrews did when they left Egypt by carrying their dough, before it was lea- vened, with them in their clothes. Still others claim that splitting the matza also symbolizes the splitting of the Red Sea which was one of the miracles of the Exodus. According to some, the broken piece which is put away represents the "Afiko- man" which is symbolic of the matza which was eaten with the Paschal Lamb after the meal. The food on Passover evening thus has two representations signify- ing the two sacrifices of Passover-the general holi- day sacrifice (hagiga) eaten on all major holidays in the time of the ancient Temple and the Paschal of- fering (pesah) eaten during Temple times on the eve of the Passover.
