Dave put on quite a show
... assisted by Elfriede Kru-
siewicz, one of the best wait-
resses in town ... First a
bottle of Piesporter Gold-
ropfchen white wine and
some mushroom barley
soup ... Then Dave rolled
his cart over to make an ex-
cellent Caesar Salad, while
all the time giving out with
entertainingly humorous re-
partee ... Next, Oysters
Rockefeller as we've never
before seen them prepared
... Back came Dave with
his cart and equipment that
has been used almost all
over the world.
And did. he do a job ...
flaming everything at the
table and giving out laugh-
able moments as he worked
with obvious joy ... His own
Steak Squire recipe filet
flamed in brandy, Escallop
du Veal Savayrode
flambe'd in lemon, sherry
wine, white wine and
cream, topped with mush-
rooms ... and succulent
split lobster tails.
Another "new discovery"
of Dave's is the use of
Frontenac Wines in his
cooking ... It is a Michigan
winery (Paw Paw) ... and
Dave likes to use as many
local or near local products
as possible if they conform
to his taste desires.
A truly elegant gourmet
meal ... highlighted with
champagne and Elfriede's
smile ... but not yet fin-
ished ... The final touch

ing decreed that Raven
among others in Southfield
will get the _coveted ticket
... Sad that Raven owner
Herb Cohen couldn't live to
smell the flowers ... After
years of trying to get the li-
cense, he passed away re-
cently.
ERRATA ... Name of fine
couple with us at Benno's
was Ruth and Lou Kashdan.
... (typo had his name as
Al).
ROLF OLAFSON; direc-
tor of catering at the new
Detroit Plaza. is no strang-
er to Detroiters ... He was
head of catering at the Stat-
ler-Hilton (a year later
changed to Detroit-Hilton)
for five years from 1967 on
... and then served a ses-
sion as manager at the
Caucus Club ... before leav-
ing for El Paso, Texas to
run a delicatessen there as
partner-manager ... Rolf
has been on the Western In-
ternational team as head of
catering in Houston, then
Century Plaza in Los Angel-
es and now here.
Also well-known in these
parts is Detroit Plaza's ban-
quet manager, Sal Marino,
former northwest restau-
rant manager and Hyatt Re-
gency banquet head.
After 15 years at the
Raleigh House, Marian
Brown is banquet captain
at Detroit Plaza.
HARD TO BEAT the tuna

Benny's Deli on Nine Mile
and Coolidge in Oak Park.

begin renovations April 1 to
