Recipes for Passover

With Passover around
the corner, I would like to
call to your attention
some of the special Pas-
sover cookbooks pub-
lished by various organi-
zations around the coun-
try which have come to
my attention: This week I
will share with you some
recipes from "Pas-
soverama," a publication
of the Sisterhood of Tem-
ple Beth Hillel/Beth El of
Wynnewood, Pa. 19096. If
you're interested in a
copy, they're $4 per copy
plus 50 cents per book for
handling and postage and
you can send for it at the
above address. A nice fea-
ture of the book is a
washable cover, plus it
has pockets in each sec-
tion to insert your own
favorite recipes and clip-
pings — a handy extra.

Passover Kisses

4 egg whites
1/8 tsp. salt
1 cup sugar
1 cup chopped nuts
Beat egg whites until
foamy. Add salt and beat
until stiff. Continue beating,
gradually adding sugar.
When very stiff, fold in nuts.
Line cookie sheet with brown
paper. Drop by teaspoonful on
cookie sheet. Bake at 275 de-
grees for 30 minutes. Makes 4
dozen.

Rhubarb Dessert -

8 stalks rhubarb
1 box fresh strawberries (pt. or
qt.)
1 cup water
sugar to taste
Boil rhubarb, strawberries
and water on low heat until
strawberries are soft (15 mi-
nutes). Drain water, add
sugar to taste. Serves 6.

Passover Pareve
Chocolate Dessert

4 large eggs, separated
3/4 cup sugar
1/4 lb. margarine (1 stick)
3 tbsps. cocoa mixed..with 1/8
tsp. cinnamon
1 tbsp. wine
Beat egg whites until
foamy. Gradually beat in 1/4
cup sugar until whites are ,
stiff. Set aside. Without wash-
ing beater, gradually cream
margarine and rest of sugar
(1/2 cup). Thoroughly beat in
yolks, cocoa and cinnamon
