Editor, The Jewish News:

Reader Kurt Bauer ex-
pressed some skepticism,
in a letter to The Jewish
News, about the neces-
sity of the OU emblem of
kashrut "on such items as
cornstarch, spices, corn
syrup, honey, and the
like."
What Mr. Bauer
doesn't seem to under-
stand is that in today's
sophisticated, highly
mechanized food indus-
try, many ingredients are
put into a product that
are not listed among the
ingredients on the label.
The items he mentions,
cornstarch, spices, and
corn syrup, for example,
contain many additives,
in the form of stabilizers
and emulsifiers, which
may be of animal origin.
Consequently, they do
very genuinely require
rabbinical supervision.
Today, the only na-
tional organization that
has undertaken this re-
sponsibility is the Union
of Orthodox Jewish Con-
gregations of America.
Operating on a non-profit
basis, they have done an
enormous benefit to the
Jewish community. If not
for that familiar OU
emblem on thousands of
household products, kas-
hrut in American would
be in a state of utter
chaos.
