Currant-Apple Dessert (Keysel)

This fruit dessert comes
from a family recipe. It was
popular in Eastern Europe
and hits the spot on a hot
summer day. When chilled,
this dessert forms almost a
pudding-like consistency.

1 quart fresh currants
4 medium apples
(peeled and sliced)
8 cups of cold water
1 '74 to 2 cups of sugar

1 tablespoons potato starch
1/4 cups cold water
Remove stems from the cur-
rants and wash them. Bring cur-
rants to a boil in eight cups of
water in a heavy pot. Simmer for
10 minutes. Put through a strai-
ner, discarding the pulp and

seeds. Put the liquid back in the

pot, add the apples and cook 10
more minutes, after bringing it to
a second boil. Add the sugar,
more or less, according to taste.
In a large bowl, mix the potato
starch with 1/4 cup of cold water,

stirring well. Then add slowly

two cups of the boiling currants
(one cup at a time), to the starch
mixture, stirring as you pour.
Then add this starch-currant mix-
ture to the remaining currants in
the pot. Mix well with a wooden
spoon, making sure there are no
lumps. Turn off the fire. When
cool, refrigerate and serve well
chilled.
