Wiener Schnitzel THE REST AND RECREATION AREA 1/4 -inch thick 1 cup fresh lemon juice salt freshly ground pepper 2 eggs 2 tbsps. water 1 /4 cup flour 1 cup fine bread crumbs 11/2 cups cooking oil or margarine (pareve) In a glass dish, marinate cutlets in lemon juice for one hour. Pat cutlets dry with paper towels; sprinkle with salt and pepper; dip in eggs beaten with water, then dip in flour and shake off the excess,.and finally dip in bread crumbs. Refrigerate for 20 min- utes. Heat oil in a heavy 12-inch skil- let until a light haze forms. Add cu- tlets; cook at medium heat three to four minutes on each side. Turn with tongs. Serve over lemon garlic vermi- celli. (See following instruction). LEMON GARLIC VERMICELLI: Saute 2 large onions, sliced in rings, in one stick margarine. When onions are golden, add 1 pound sliced fresh mushrooms. Add '2 cloves crushed garlic or minced garlic and juice from half lemon. Cook additional 2 min- utes. Inicsrge pot, boil vermicelli ac- cording to package. Blanch and drain well. Add to mushrooms and onions and toss. Additional margarine may be added. Toss until hot. Serve with slices of veal on top.
