Hadassah Member
Is Mother of Year

NEW YORK — Josie
Wainman Burson of Mem-
phis, a member of the na-
tional board of Hadassah
and a past national vice
president, was named
American Mother of the
Year for 1975 by the Na-
tional American Mothers'
Committee.
Mrs. Burson is national
constitution chairman and a
deputy member of the ac-
tions committee of the
World Zionist Organization
and a member of the Na-
tional Zionist Affairs Com-
mittee.
On a local level, Mrs. Bur-
son has been active in
United Jewish Appeal and
Israel Bonds activities. She
has participated in World
Zionist Congresses in Israel
and visited the Soviet Union
as a participant in a Hadas-
sah study mission. She was
a delegate of the World Con-
ference of Jewish Communi-
ties on Soviet Jewry held in
Brussels in 1971.

Several people have re-
quested a recipe for felafel,
one of Israel's most popular
"street foods." The follow-
ing is a lot of work, but has
a nice taste. Serve the fela-
fel balls hot with toothpicks
as hors d'oeuvres or tucked
in a pita (Middle Eastern
bread) with cut up tomatoes
and cucumbers and tehina
(ground sesame) sauce.

will get puffy, forming a pocket
which can be filled. Do not let pi-
tas get brown. Freeze in plastic
bag and reheat frozen just long
enough to warm. Unfrozen and
stored in plastic bags they'll keep
a few days.

Not too long ago, I pub-
lished a recipe in this col-
umn for a refrigerator yeast
dough using sour cream.
Judging by the response r
received, the recipe was a
popular one. Now I'd like to
pass along to you another
refrigerator yeast dough
recipe — this time one that
is_pareve.

1 lb. dry chickpeas
6 tbsps. wheat germ
2 garlic cloves
2 tsps. salt
3 tsps. ground cumin
1/2 tsp. ground coriander oil
Soak chickpeas in water to
cover for 24 hours. Peel them.
Grind the chickpeas and garlic in
a grinder twice. Mix with wheat
germ and spices. Form into balls
about 1 inch in diameter. Deep fry
the balls in hot oil. Drain and
serve hot. Makes about 40 balls.

My last recipe told how to
make felafel balls. Now how
about trying your hand at
making pita, the -Middle
Eastern bread? The pita
may be filled with felafel
and vsalad and tehina
(ground sesame seed sauce)
to make a traditional
Mideast sandwich or used
simply like a roll for any
kind of sandwich. My fam-
ily enjoys eating hamburg-
ers in them. Remember, a
very hot oven is essential for
baking the pita!

1 oz. fresh yeast
1 tsp. sugar
1'./2 cups lukewarm water
4 1/2 cups flour (approx.)
1 1/2 tsps. salt
Dissolve yeast and sugar in the
lnkewaim water. Put flour and
salt in a large bowl. Make a well
-
in center and add the yeast mix-
ture. Knead thoroughly until
dough is smooth and elastic. Div-
' ide the dough into 24 balls. Place
on ungreased cookie sheets, cover
with a clean towel and let rise
30-40 minutes in a warm place.
Roll each ball into a fairly thin
pancake about '/s of an inch thick.
Place on ungreased cookie sheet
and let rise 20-30 minutes in a
warm place. Place each cookie
sheet in a 500-degree pre-heated
oven for 2 to 3 minutes. The pitas

2 sticks margarine
3 tbsps. sugar
3 egg yolks
2 and 3/4 cups flour
V2 cup liquid non-dairy creamer
3 egg whites
1 scant cup sugar
11/2 cups nuts, chopped
1 cup chocolate chips (minia-
ture)
Dissolve yeast in warm water.
Cream margarine, sugar and egg
yolks. Add yeast, creamer and
flour. Mix well. Cover and refri-
gerate overnight.
Divide dough into two balls.
With floured hands, on a well
floured board, roll each ball into a
farily thin rectangle. Beat the egg
whites until stiff, then gradually
add sugar and beat until all is
blended. Spread one-half the egg
whites on each rectangle.
Put the 3/4 cup nuts and 1/2 cup
chocolate chips on each. Roll like
a jelly roll. Place each roll in a
greased tube or bundt pan, with
the rolled edge down, and pinch
together. Make sure your roll is
uniform in thickness or your cake
will be uneven. Cover and let rise
in a warm place for 11/2 hours.
Bake at 350 degrees for 50 Min-
utes.

The Shavuot holiday is-
here, and I have for you this
week something really un-
usual — a dairy version of
gefilte fish, made into a
mold.

4 lbs. ground fish (pike, white-
fish, carp or buffalo)
' pint sweet cream
4 eggs, separated salt, pepper to
taste
2 medium grated onions
2 rounded tbsps. bread crumbs
or matzo meal
Mix all ingredients together
except egg whites, which are
beaten stiffly and added last. Pack
into large, well-greased mold.
Place into larger pan (half filled
. with water) and bake, foil cov-
ered, in 325-degree oven for two
hours. Unmold and serve hot.

In 1898 Spanish-Ameri-
can War ended Spanish rule

Tobago, opening them to

people, believe that a new
Hitler could rise in Ger-
many if there were a serious
crisis, according to a survey
carried out by the Infas
