PINEAPPLE PUDDING
1-pound 14-ounce can crushed
pineapple
3 tbsp. flour
4 eggs
tablespoons margarine
1 /2 tsp. salt
juice of 1 lemon
Mix the flour with some of the
pineapple juice, and stir the flour
into the crushed pineapple. Beat
the eggs well, and add to the
crushed pineapple. Add the mar-
garine, salt, and lemon juice, and
mix well. Pour into a greased
baking dish, and bake for 45 min-
utes in a 350-degree oven. Serve
as a pudding or as a side dish
with chicken or meat. 6 servings.

RAISIN CAKE
1 cup raisins
1 cup water
1 cup brown sugar
1 /2 cup margarine
2 cups flour, sifted
2 tsp. baking powder
1 /2 tsp. baking soda
1 tsp. cinnamon
1 egg, beaten
grated peel of 1 lemon
juice of 1 lemon
confectioners' sugar
Put the raisins, water, brown
sugar, and margarine in a sauce-
pan, and bring to a boil. Lower
the heat, and simmer for 5 min-
utes. Allow to cool.
Sift the flour together with the
baking powder, baking soda, and
cinnamon. Add the dry ingredi-
ents to the cooled raisin mixture
together with the egg, lemon peel,
and lemon juice, and mix well.
Pour the batter into a 9x9-inch
greased pan. Bake in a 350-degree
oven for 1 hour.
Sift confectioners' sugar over
the top of the cake when cooled.

HONEY CAKE
4 cups flour, sifted
1 tsp. baking soda
2 1/2 tsp. baking powder
1 teaspoon cinnamon
1 /2 tsp. powdered ginger
1 /2 tsp. allspice
1 /2 tsp. nutmeg
1 1/2 cups sugar
2 tbsp. brown sugar
1 /2 cup margarine
4 eggs
1 pound honey
3 /4 cup strong coffee
Sift the flour together with the
baking soda, baking powder, and
the spices.
Cream the sugars with the mar-
garine until fluffy. Add the eggs,
one at a time, mixing well. Add
the honey.
Stir the flour and spices togeth-
er with the coffee into the sugar,
margarine, and honey mixture.
Mix well.
Pour the batter into a greased
and floured 9x12-inch pan.
Bake the cake in a 350-degree
oven for 15 minutes. Reduce the
oven to 325 degrees, and continue
to bake for 45 minutes longer or
until done.

TEIGLACH
3 eggs
1 tbsp. sugar
3 tbsp. margarine
2 cups flour
2 tsp. powdered ginger
1 cup broken walnuts
SYRUP
1 cup honey
1 cup sugar
Cream the eggs with the sugar
and margarine. Add the flour, and
mix together to form a soft but
not sticky dough. If the dough is
too sticky, use a little more flour.
Divide the dough into several
batch-es. On a floured board, roll
out each batch of the dough into
a long rope. Cut into 1/2-inch•
pieces.
To make the syrup, bring the
honey and sugar to a boil in a
deep pot.
Drop the pieces of dough into
the syrup. Cover the pot, lower
the heat, and cook for 30 minutes.
Shake the pot a few times while
cooking so that the teiglach will
not stick to the bottom of the pot.
After cooking for 30 minutes, re-
move the cover and stir the
teighlach with a wooden spoon to
move the top pieces down into the
syrup and bring the bottom ones
to the top. Stir gently in order
not to •rea.k the teiglach. Add the
ginger and walnuts. (Those who
adhere to the custom of not eat-
ing nuts on Rosh Hashana can
omit the walnuts.) Cover and con-
tinue to cook until all the pieces
are browned. The teiglach are
done when they are dry inside
and not doughy.
Pour the teiglach on a flat wet
board, and with wet hands flat-
ten them out. Sprinkle with more
ginger if ginger flavor is desired.
When cold, cut in squares. Teig-
lach are best made on a dry, not
humid, day.

APPLE AND HONEY COMPOTE
2 pound§ baking apples
1 cup honey
2 tbsp. lemon juice
1 /4 tsp. nutmeg
1/4 cup white wine or orange juice
Peel and cut the apples into
quarters, and place them in a.
baking dish. Mix the honey, l•m-
on juice, nutmeg, and the wine
or orange juice, an•d pour the
mixture over the apples.
Bake uncovered in a 375-degree
oven for 45 minutes, basting the
apples a few times during the
baking. 6 servings.

Three girls pictured above are from the Soviet Union,
and part of the student body at the Bessie Gotsfeld Child-
ren's Village, Kfar Batya, in Raanana, Israel. Since 1947,
when the village was established by American Mizrachi
Women, children from more than 25 countries escaping
persecution, and crisis, have come of age in this world-re-
nowned village. Today, some 20 per cent of the villagers
are of Soviet origin. Begun as a farm school, Kfar Batya
has become a major industrial, vocational, and academic
center for children of religious background.
