Chicken is a staple in near-
ly every Jewish home, and
because of that, housewives
are constantly on the lookout
for different ways to prepare
it.

1- to 3-lb spring chicken

2 cups water
1 medium onion quartered
3 celery tops
1 tsp. salt
1/4 tsp. pepper
Put all ingredients into pot;
bring to boil; cover tightly. Re-
duce heat and simmer one hour
or until tender. Remove from
I
heat and strain broth. Put broth
I in refrigerator and cool chicken
to room temperature; when cool,
remove skin from meat and meat
from bones. Cut meat into chuks.
I For chicken a la king use:
1 4 cup parve margarine
6 tbsps. flour
1 tsp. salt
1 1/2 cups chicken broth
1 cup liquid non-dairy coffee
creamer
1/2 cup water
1 diced green pepper
1 6-oz. can Fliced mushrooms
1 4 cup diced pimento
2 1/2 cups chunks of cooked chick-
en
In large saucepan melt marga-
rine: blend in flour and salt. Stir
in chicken broth. water and cof-
fee creamer. Add green pepper;
cook, stirring constantly until
mixture thickens and comes to a
boil. Add drained mushrooms, pi-
mento and chicken; simmer five
minutes. Serve hot on toast or
cooked rice. Yields 5-6 servings.

6 Cornish hens (about 14 oz. each)
1 pkg. wild rice mix or long grain
and wild rice combination
1 medium onion, chopped
2 tbsps. pareve• margarine
14 tsp. sage
1 4 cup brandy
1 cup orange sections
To make the stuffing, cook rice
until it is still slightly firm.
Drain. In a skillet, melt marga-
rine and cook chopped onion un-
til browned. Add rice and sage;
toss gently. Preheat oven to 350
degrees. Clean, wash and dry
hens. Stuff lightly and skewer or
sew the vents closed. Brush hens
with 14 cup melted margarine and
place breast side up on a rack in
a shallow pan. Roast uncovered
about 1 hour, basting occasional-
ly with the melted margarine.
Make a sauce by adding 1,4 cup
water to the drippings in the
roasting pan, stirring to dislodge
browned particles from the pan.
Add 1/4 cup brandy and 1 cup or-
ange sections. Cook two minutes.
Serve with hens. YIELD: 6 serv-
ings.
