Israeli Recipes Use Peanut Oil

Israelis combine tradition
with innovation in many
aspects of their lives—especi-
ally in their eating habits,
because their cuisine incorpo-
rates an assortment of inter-
national dishes with ancient
traditions.
The High Holy Days are
observed in Israel with a
v a r i e t y of international
foods. Sweet Baby Lima
Beans and Sole in Wine
Marinade are two Israeli
favorites for Rosh Hashana.
The lima beans are sau-
teed in peanut oil and baked
with a honey glaze. The fish
is marinated in a mixture of
onion, peanut oil, raisins,
almonds, white wine and
vinegar.
Both recipes use Planters
Peanut Oil—a flavorless oil
which does not impart any
taste of its own to cooked
foods.

SWEET BABY LIMA BEANS
1 pkg. (1 - 1b.) dried baby

lima beans
1/4 cup Planters Peanut Oil
1 cup chopped onion
3/4 cup honey
2 teaspoons salt
Soak beans several hours or
overnight. Cover with water and

cook over low heat until tender,
about 1 hour. Drain.
Saute onion in peanut oil until
tender. Stir in honey and salt.
Mix into lima beans. Turn mix-
ture into a 2-quart casserole.
Cover; bake at 350 degrees until
beans are glazed, about 1 hour.
Makes 12 servings.
SOLE - IN WINE MARINADE
2 cups sliced onion
cup. Planters Peanut Oil
1 /4 cup dark seedless raisins
2 tablespoons Planters South-
ern Belle Slivered Almonds
1 teaspoon salt
1 /8 teaspoon pepper
1/2 cup cream white wine
1 /4 cup wine vinegar
11/2 pounds of filet of sole
In large skillet gently saute
onions in Planters Peanut Oil un-
til tender. Remove from heat.
Stir in raisins, almonds, • salt,
pepper, • wine and wine vinegar.
Bring to a boil. Add sole. Cover
and cook over medium heat for
15 minutes.
Carefully transfer fish to shal-
low casserole dish. Spoon on re-
maining contents of skillet.
Cover tightly and refrigerate
several h o u r s or overnight.
Makes 4 servings.
