Kosher Cooks Can Watch Pennies and Go Gourmet at Same Time

The economical kosher
cook need not forego gourmet
cuisine, a Southfield mother
of three will prove in her new
class for the Southfield Pub-
lic Schools adult education
program, starting in October.
Mrs. Joel (Norma) Stern
will hold a demonstration-
lecture class for cooks who
would like to accept the chal-

lenge of preparing low-cost
gourmet Kosher meals. One
of those challenges, said Mrs.
Stern, is to share her secrets
of using milk product substi-
tutes.

Married for five years and
the mother of three boys,
Mrs. Stern keeps a kosher
home and said she has adapt-
ed many recipes found in
non-kosher cookbooks.

Born in Buhara, in the So-
viet Union, Mrs. Stern emi-

STUFFED CABBAGE
Mix Together:
2 lbs. hamburger
2 eggs
1 tsp. salt
1 /4 cup raw rice
1 tbs. onion
Set aside.
Bring a large pot half full of
water to a boil. Core cabbage and
place into pot for 15 minutes. As
each leaf becomes soft and pli-
able remove carefully and set
aside.
Roll meat into balls and wrap
into cabbage leaves. Place each
cabbage roll into bottom of pot.
SAUCE:
8 oz. can tomato sauce
34 cup water
2 cans tomato soup
2 tbs. brown sugar
Sour salt to taste
Cover cabbage rolls with sauce
mixture. Let simmer VA hours
and then bake in 350 degree
oven, uncovered, for 1/2 hour un-
til lightly browned.
Complete dinner with salad and
French bread. Serves 8. Approxi-
mately 52 cents per serving.
Freezes well.

SWEET AND SOUR CHICKEN
This checken is different—and
as good as can be found in any
Chinese restaurant.
Bone 3 pounds of chicken, cut
into 2 inch pieces with poultry
scissors or sharp knife. Dip chick-
en into 14 cup flour seasoned
with 1 tbs. salt and 2 tbs. pap-
rika.
In large skillet, melt 1 stick

of pareve margarine. Fry chick-
en for 20 minutes, turning only
once after 10 minutes. Set aside.
SAUCE:
Mix in sauce pan:
14 cup vinegar
cup pineapple juice
IA cup brown sugar
Bring to boil and set aside to
cool.
Add to juice mixture:
2 tbs. corn starch
2 tbs. water
1 tsp. soy sauce
1 tbs. catsup
Heat 1/4 cup oil in dutch oven.
Add 1 green pepper cut up in
chunks, 1 cup sliced carrots and
1 can drained pineapple chunks.
Mix well in oil. Add hicken
pieces, then sauce and lower
heat. Cook until completely heat-
ed through. 'Serve over bed of
rice.
Complete dinner with wedge of
lettuce and hot rolls. Serves 6.
Approximately 60 cents per serv-
ing.

$5 Million Goal

Leon Dulzin, acting chair-
man of the World Zionist
Executive, said that it ap-
pears the $6,000,000 needed
to operate the Conference of
Jewish Organizations (COJO)
Education Fund will be re-
ceived sooner than expected.
He spoke to-- the central
committee of COJO's na-
tional board for Jewish edu-
cation, which convened here
this week.

Yehuda Hellman, general
secretary of COJO, said
American and Canadian
members of the Executive
will meet in New York next
month and that Dulzin will
present an additional prog-
ress report on the fund.

Dr. Mandell, who earned
his degrees at the University
of Michigan and Wayne State
University, is supervisor of
the department of speech
correction and hearing con-
servation of the Detroit Pub-
lic Schools; is an instructor
at Wayne State University;
and has a private practice
in speech, language and
tongue habit disorders.
He is a former president
of the Michigan Speech and
Hearing Association, is a
legislative councilor a n d
a member of the Council for
Exceptional Children, Phi
Delta Kappa, Michigan As-
sociation for Children with
Learning Disabilities. D r .
Mandell is on the executive
committee of the Jewish Com-
munity Council and is treas-
urer of the Detroit district
of the ZOA. He and his wife
Yvette are the parents of
two sons and two daughters.
A Balfour workers' kick-
off brunch will be held 10:30
