PASSOVER ORANGE CAKE 8 eggs, separated iti cups sugar 43 cup orange Juice 1 teaspoon grated orange rine. 11/4 cups sifted Passover cake meal 2 ,4 teaspoon salt tfi teaspoon cinnamon Vs cup finely chopped nuts I. Beat egg y oolks until thick and lemon. colored. Gradually add sugar, beating after each addition until mixture is light but very- thick. Add orange Juice and beat well (about three minutes in electric mixer). Stir in orange rind. 2. Sift together cake meal, salt and cin- namon; add nuts and mix lightly. Fold dry ingredients gently Into beaten l egg yoks. 3. Beat egg whites until stiff but not dry; gently fold into cake batter, blending well. 4. Turn into nine or 10-inch =greased tube 131111. Bake in 325-degree F. oven nee hour or until done. 5.Remove from oven; invert pan and cool cake before removing frean pan. Top cooled cake with whipped cream (optional). Dr. Miller, who was a resi- dent in psychiatry at both Topeka State Hospital and the Menninger Foundation in Kansas, has taught and lectured at many colleges and clinics in England and the United States. He will answer questions pertaining to any problems involv- ing adolescents.
