YORKSHIRE PUDDING
This dish is inspired by the
British kitchen, which claims to
be number one in beef' roast-
ing. The claim to fame is sub-
stantiated by centuries of meat
eating that perfected beef resist-
ing into an art. To accompany the
delicious roast, the British prefer
Yorkshire pudding. The "pudding"
is not really what you may have
in mind. It is not heavy like a
bread pudding, nor is it sweet
like a dessert pudding. The York-
shire pudding looks like a puffed
pancake, is light and airy inside
while delicately crisp outside. To
the romantic Englishmen, the pud-
ding reminds one of a big yellow
flower opening to the sunshine.
But its purpose is rather prosaic
—to soak up the juices of roast
beef. Our version is adapted to
the Jewish kitchen and you may
serve it as a side dish for any
meat with sauce or gravy.
For 4-6 servings:

1 egg

1 ,4 cup flour
1/2 tsp. salt
1/2 cup water
1 this. oil
I. Blend in electric blender all ingredl-
• eats for about two minutes. There
should be no lumps, and the batter
should look smooth and satiny.
2. Chill the batter for at least one hour
In the refrigerator. Stir once more
before suing.
3. Preheat oven to 400 degrees F. Grease
well a pyrex pie plate (s" diameter),
end pour the batter into it. Put in the
center of the even.
4. Bake for 15 minutes and lower
the heat to 375 degrees F. Bake for
another 20 minutes till the "pud-
ding" putts at the rim and becomes
golden brown. Serve immediately.

and more than 100 other artists.
During the show, tickets will be
on sale at the door.

The antique section will include

many dealers who displayed at
previous shows plus several new
entrants.
A snack cafe will offer salads,
sandwiches and sweets and will
be open each day at noon.
Meredith recently made his Eu-
ropean debut in Geneva as Scarpia
in TOSCA. Since his debut at the
Met in 1962 in the four baritone
roles in "The Tales of Hoffmann,"
he has gone on to score acclaim
with the Grand Theater de Geneve,
the Chicago Lyric Opera, the San
Francisco Opera and other lead-
ing companies in Canada and Eu-
rope. He is in his eighth season
with the Metropolitan Opera.
Sy-me, who has studied under
Jorge Bolet, Ozan Marsh and Ania
Dorfman, is the 22-year-old son of
Temple Israel Rabbi M. Robert
Syme. A former student of the
Juiliard School of Music, he has
received numerous scholarships
and awards.
He recently appeared with the
Detroit Symphony Orchestra, De-
troit Metropolitan Orchestra, Cen-
ter Symphony Orchestra, Juidliard
String Orchestra, University of
Arizona Symphony and Chautauqua
Symphony, New York.
