Well, in this day and age of frozen foods and Women's Lib, that saying re- flects more on the versatility of eggplants than on the competence of the housewife. And indeed, egg- plants lend themselves to innum- erable dishes; salads, first courses, and main dishes made with egg- plants are exceptionally good. The stuffed eggplants can be served as the hub of a meal. The recipe calls for no meat, yet is satisfying and nourishing, as it is handsome and appetizing. Cut the eggplants lengthwise. Using a teaspoon or a grapefruit knife scoop out the flesh of the egg- plants, leaving about 1/2 inch thick rim at the peel. The peel will then be stuffed. 2. Fry peels carefully in the oil till just tender. Remove them gently from skillet and place them in a greased baking pan, open side up. 3. Cbop the onions, garlic cloves. tomatoes and the flesh of the egg- plant. Add to the skillet and fry lightly in same oil. Add salt, pep- per. parsley and mix. 4. Fill the scooped-out peels with the vegetable-mixture and top with bread crumbs. Bake for about 45 minutes In a 350 degree F. oven. Sprinkle the top with chesse and bake an additional 10 minutes, until the cheese melts.
