LETTER BOX ® r Defends Pathologists Editor, The Jewish News: After reading your commentary of Dec.- 17, I wish to add the fol- lowing passage of our heritage, pertaining to Prof. Jacob Katz, rector of the Hebrew University, about the mitzva of pathology, "Rol hamkayem nefesh achat miyisrael kilu kayem olam mole." Anyone that saves a life of an Israelite is like saving the whole world. God knows pathology saves many many lives. According to our con- cept, the Sabbath is most holy, but if we have to save a life it is a mitzva to break the Sabbath and save a life. I am writing on behalf of one of the recipients of this wonderful gift, one who is still glowing with delight because of a day she can truly treasure. Isn't it great to know -there are warm and giving people, who real- ize mere existence is not sufficient and are thoughtful enough to bring joy and happiness into the lives of people who have so few special days? CANTOR A. A. ROSENFELD A simple sauce can sometimes perform wonders. Take regular ground meat, dress it up as sug- gested below, and "Open Sesame" —it turns to a famous Middle East- ern specialty. The dish we are ref- erring to is seniye, meat baked with herbs; and the simple sauce is tehina. The sauce is available, ready to use, in cans. It is an Is- raeli product, manufactured by Telma, one of the leading Israeli food industries. The tehina sauce is made mainly of sesame seed, and it is interesting to note that this seed is surrounded with mys- tic in folklore and fairy tales. In the story of All Baba and the Forty Thieves the doors of a cave full of treasures open when the famous "Open Sesame" command is heard. This derives from the Tact that the ripe sesame fruit opens very suddenly. The Israeli tehina sauce cannot open doors, but it sure can turn the seniye in- to one of your treasured recipes. -
