meat. in the pan and turn it over so
it is covered. with the marinade.
2. Cover the roasting - pan - with alumi-
num - foil and put in .the refrigerator
Overnight. Keep it there until about

marinade so it will -absorb the fla-
vors on all sides.
3. Five hours before. serving time put
- lire meat in a 355 Degree F oven. Be
sure ..that - the aluminum cover is
closed tightly over the pan. When the
meat is roasted covered, it does not
dry -out,- and remains Juicy.
4. Roast for four or four-and-a-half
hours. Take out -of oven. Put on a
- serving plate and trim off some fat.
Skim the fat off pan- Juices and -
. serve it as a Gelicions sauce. Slice
crosswise. '
