Initiated last summer as an ex- perimental program, the "Law and Policy Institute" has been so suc- cessful it is hoped to make it a permanent program at Hebrew University, with its own faculty of three or four teachers as well as outside lecturers. According to the program's initiator and director, Prof. Nicho- las Kittrie, professor of law at American University, the 27 stu- dents are returning to their home universities not only broadened in knowledge and horizons by ac- quaintance with another culture, but also equipped to deal with political and legal questions on the Middle East situation. POTATO KNISHES Rosh Hashana is again at our doorstep. The beautiful holiday period will bring lots of guests, relatives and friends to our homes. Preparing favorite dishes for them is indeed a pleasant job, and I hope you will enjoy preparing potato knishes for family use and entertaining. The recipe is a basic one, and you may adapt and change the fillings of the knishes to your liking. You can fill them with meat, liver or kasha. Be sure that the fillings are fully cooked and seasoned before you wrap them with the dough. If you want to make your life a little easier, you may also use the same in- gredients, but instead of preparing individual knishes, make a long "knish" that looks like a jelly-roll, and then cut it into serving pieces. The dough: 2 1/2 cups all purpose flour 1 cup margarine 1 cup water 2 tbls. vinegar 1 tsp. salt The topping: 1 egg yolk 2 tbls. water 2 oz. sesame seed The filling: 2 cups mashed potatoes (you may use instant mashed potatoes) 2 tbls. dehydrated onion flakes 2 tbls. margarine 1 tsp. salt Dash pepper 1. Prepare the dough one day in ad- vance because it needs overnight re- frigeration. Bring the water to a boil, add the margarine and stir until it melts. Remove from heat and add the vinegar and salt. Sift the flour into a bowl and add the water and margarine. Stir well to blend all ingredients. Stir for two minutes and cover with wax paper and refrigerate. 2. Before you stari. preparing the knish- es heat the oven to 300 degee F. Prepare the filling. Combine the mashed potatoes with onion, marga- rine, salt and pepper. Mix well. 3. Divide the dough into two balls for easier rolling. Sprinkle with flour and roll to a thin leaf. Cut into 3-4 inch circles. On each circle put a heaping tsp. of filling. Moisten the edges with a drop of water, then fold over and seal by pressing the edges together. For better sealing, pinch the • edges. Repeat till all the dough is finished. 4. Dilute one egg yolk in two tbls. cold water. Brush the top of the knishes with this mixture. Sprinkle sesame seeds over the wet surface. Arrange on a baking sheet and bake for 30 minutes until the top of the knishes is golden brown. The yield: about 30 knishes.
