ARMENIAN COOKBOOK
A new cookbook was just re-
cently published, and I was very
eager to leaf through it . . . The
book is c a 11 e d "The Art of
Armenian Cooking" by Rose Ba-
boian (Doubleday & Co., Inc.),
and has about 200 recipes of
Armenian d i s h e s. Mrs. Baboian
explains that the Armenian kitchen
was influenced by Russian, Turk-
' ish, Jewish and Arab cuisines. And
indeed I found there many recipes
that are well known in Israel,
which can be explained by simi-
larity of sources of influence. Some
of my favorite sweets, candies and
cakes can be found in the book,
like Baklava, Lokoom, Kadeyif and
Mamoul (recipe given here.)
However, I do have some re-
marks about the way the book
is put together. I didn't care too
much for alphabetical order of
dishes which puts desserts before
stews, and cakes before main
dishes. I also have reservations
about the way the ingredients are
listed in the recipes. They are
not clearly -narked and it takes
some time to know what ingre-
dients you have to buy or prepare.
Here is a recipe for cookies I re-
member eating in Israel—the way
it is given in the book:

Aleppo Mamoul
Bake at 375 degrees for 15 minutes
(makes about 31/2 dozen).
Place in large mixing bowl 2 cups
semolina flour or farina or quick
cream of wheat (semolina may be
purchased from Near Eastern stores).
Stir in 1 cup melted warm sweet but-
ter or margarine and 6 this. warm
milk. Let it stand for 1 hour.
Mix in PA cups sifted flour, 1 cup
sugar, and 1 /4 cup shortening. Knead
until well blended.
Cut dough into walnut-sized pieces.
Shape as a cone. Then shape a hole
in each piece. Fill with 1 1/2 tsp. nut
filling (given below).
Arrange' 2 inches apart on ungreased
baking sheet. Bake in quick moderate
oven (375 degrees) for about 15 min-
utes until mamouls are firm. Sprinkle
confectioners' sugar on a baking
sheet. Place hot mamouls over sugar.
Then sprinkle confectioners' sugar gen-
erously on tops of mamouls, or spread
marshmallow fluff on mamouls instead
of confectioners' sugar.
Nut Filling
Mix together 1 1/2 cups finely chopped
walnuts, 2 tbls. sugar, 1 tbls. cinnamon
and 1 tbls. butter.
