MARINATED BELL PEPPERS
Recently I prepared several
batches of marinated bell peppers
and I would like to share the recipe
with you. The peppers are cool and
tangy. They add color and variety
to any meal, be it lunch or dinner.
The marinated peppers keep well
in refrigeration so you can use
them at your convenience. The
peppers themselves are low in
calories, which makes them a big
favorite of ours. Serve them as a
relish, as a vegetable dish to ac
commodate meat or fish, or use
them in salads the way you would
picVes.

For 4-6 Servings:
1 pound bell peppers and or pimentos
2 cups water
1 /3 cup salad or olive oil
1 /3 cup lemon juice
1 tbls. wine vinegar
1 bay leaf
6 peppercorns
2 tsp. salt
2 garlic cloves
1 medium onion—sliced
1. Cook all ingredients, except bell pep-
pers, in a covered saucepan, on me-
dium heat for 10 minutes.
2. Meanwhile, clean peppers, cut them
lengthwise into six parts. Discard
seeds and other inedible parts. Put
the peppers into the saucepan. Bring
to a boil again and then lower the
heat and let the peppers simmer in
the marinade for 15 minutes. Turn
the peppers occasionally in the pan
so they are cooked properly on all
sides.
3. After 15 minutes take out the peppers
with a slotted spoon. Boil down the
marinade into half the amount by
boiling it vigorously on high heat.
Pour the concentrated marinade over
peppers. Keep in a covered dish in
the refrigerator.
