Juice of 1 lemon
1 cup toasted bread croutons
1 raw egg
1 small can of rolled anchovies
3 cloves of garlic
6 tablespoons grated hard cheese
Salt
Freshly ground pepper
1. Prepare garlic oil a day ahead. Peel
and cut the garlic cloves lengthwise.
• Put them in the oil and let stand
till you need it.
2. Several hours before making the
salad, or even a day before,' clean
the lettuce thoroughly. Separate the
leaves and pat them dry. You may
also spread them on a towel and
allow them to dry this way. When
they are dry, chill them in a plastic
bag. This will make them crisp.
3. Prepare the croutons by cutting about
five slices of bread into half-inch
squares. Toast them in the oven—
spread on a cookie sheet. (250 de-
grees F—for 30 minutes, or till crisp ).
You may also buy ready-made crou-
tons.
4. For added excitement, you can pre-
pare the salad in front of your guests,
or prepare it in the kitchen just
before serving. Tear the lettuce
leaves into a chilled large salad bowl.
Drizzle half of the garlic oil on the
greens, and then drizzle the vinegar
and lemon juice.
5. Toss the salad. Break an egg into

more egg traces. Sprinkle with grated
. cheese. salt and freshly ground pep-

6. Drizzle the rest of the garlic oil .•, -1
