SPEEDY MEATBALL STEW
The weather is cold and wintry.
The days are short, and dinnertime
seems to come too early. When
you are in a rush, but still want
to treat your family to a hot and
hearty meal — here is a recipe
which is comprised mainly of "con-
venience food." Even if you gen-
erally prepare all dishes starting
from scratch, it won't hurt to serve
something good once in a while,
yet easy for you. Serve this stew
preceded by fresh vegetable and
followed with a fruit dessert.
Ph pounds ground beef
1 tsp. salt
1 egg
1 cup small bread cubes
1/4 cup finely chopped onions
2 tbis. shortening
I can beef broth
1 can tomato soup
1 can sliced carrots—one pound
1 can white potatoes (whole)—one
pound
I can small white onions-9 ounces
1/4 tsp. thyme or oregano
Four sprigs of parsley
1. In a large mixing bowl mix the
ground beef, chopped onions, egg,
salt and bread cubes. Shape into
twenty-four meat balls.
2. In a large skillet dissolve the short-
ening and brown the meatballs on
all sides. Pour off most of the fat
in the skillet.
3. Add the two cans of soup. Drain
the canned vegetables and add to
skillet. Sprinkle with thyme or ore-
gano. Cover the skillet and cook on
low heat for twenty minutes. Stir
occasionally.
4. Just before serving, top with chopped
parsley.
