As you know, almost every dish on the menu "tells a story" and has its meaning and reason for being there. Take time to explain to the children or to guests why it is customary to serve them. Our menu is. composed of tradi- tional elements and includes fish, soup, beef with vegetables and car- rot cake. When you serve the holi- day's special dishes, you and your family will feel that you are a part of a chain that will never break. 1. Bake in a 400-degree oven for 30 minutes with a cover on the dish. Remove the cover and bake another 20 minutes at 350 degrees. • • • GOLDEN CHICKEN SOUP 2 Ibs.chicken (or chicken's wings and giblets) 1 lb. beef shin bones 4 carrots 1 large onion Si celery root 1-small can of tomato paste 1 lb. carrots The browning should take about 10-15 minutes, not less than 10. The meat should be brown on all sides. 2. Slice the onion and add It to the dutch-oven. Fry until It becomes golden. Pour off some of the fat. 1 lb. potatoes 1 lb. green beans 1 pkg. frozen peas 1 pkg. frozen cauliflower 1. TI2 the meat so It will keep Its shape while cooking. In a big dutch- oven heat the oil and brown the meat. 3. Sprinkle with salt. pepper and the flour, and add three cups of beef stock tor water plus soup cubes). Add the celery, bay leaf. parsley, garlic and tomato paste. Bring to a boll and then reduce the heat and let It simmer gently for two hours, covered. 4. Clean and peel the carrots, pota- toes and snip off the ends of the green beans. Add them, in an organized way, around the meat. Taste and add salt if necessary. Let simmer for another fifty minutes. 5. Before serving, discard the celery, bay leaf and parsley. Taste again. Add the frozen vegetables around the meat and cook for seven minutes. Prepare a warm big serving plate, take the meat out, discard the tying strings, remove some of the excess fat. Correct season- Mg. 6. Put the meat in the center of the serving plate and carefully arrange the vegetables around the meat. Put the sauce through a sieve Into a nice saucer. The meat, surrounded by the vegetables, makes a beautiful sample of abundance. • • • FRESH VEGETABLE PLATE 6 lettuce leaves 3 medium tomatoes 2 cucumbers 6 radishes 6 small pickles Black and green olives Clean the lettuce, tomatoes and rad- ishes. Peel the cucumbers. Slice toma- toes, make "roses" from the radishes. Slice cucumbers. On a chilled plate arrange the lettuce, and on It arrange all the other vegetables. Sprinkle with salad dressing or with salt, oil and lemon juice. Serve Immediately. This plate will add color and beauty to the table. It is a festive substitute for the "everyday" tossed salad. CARROT TORTE 5 medium carrots 6 eggs • 1 tsp. grated orange rind (fresh) 1 tsp. orange liqueur (or brandy) 134 cups sugar cups ground almonds (1-os. pkg.) lt cup flour 1 tsp. baking powder 1. Pare the carrots, slice and cook In one cup of water - till tender—about 15 minutes. Drain them and mash through a sieve or In an electric blender. 2. Beat the egg yolks in a bowl. When the soup Is done, take out the meat, bones and vegetables. Pour it through a sieve or colander so you will have clear soup. 5. Serve with egg noodles.
