FUN AT TWENTY-ONE It is a thrill to visit the 21 club in New York. The place is famous for celebrities who dine there, as well as for outstanding food and impeccable service. "We will do everything that is humanly possi- ble to please our customers" said one staff member. To illustrate this, I was shown the huge wine cellar with its 25,000 bottles (I found Israeli wine there too). I also toured the big kitchen with its supplies of ingredients from all over the world. I spoke to the chef, who issues a new menu every day and asked him for a good recipe for my readers. Here it is: Recipe tar PETITE MARMITE Two gal. pot for boiling One lb. of beef (shoulder or short ribs) Two lb. chicken for boiling Five stalks of celery Three carrots Two turnips One beef shin bone Croutons (fried bread cubes) I. Put chicken, beef and shin bone in pot and fill with cold water. Allow ample margin for boiling. Add three teaspoons of salt. Heat until boiling with high flame, then turn to low flame, and let it simmer for 21/2 hours. 2. Meantime, peel and clean the vege- tables. Cut up into narrow strips (julienne style) and add them to the pot after 21/2 hours. Cook for another half-hour or Ull the vegetables are soft. 3. Serve in a soup dish with equal amounts of diced beef, diced chicken, and vegetables, all mixed in the broth. Add some croutons to top. 6 portions.
