A New Recipe From a New Book
A new book has just been pub-
lished and it deals only with one
delicious subject — pancakes.
("Pancakes Waffles Cookbook" —
Doubleday Inc.). While leafing
through it, looking at the beau-
tiful pictures and colorful in-
structions, you will feel like run-
ning to the kitchen and preparing
a batch or two. The choice and
variety are big. You can choose be-
tween blintzes and blinis, Buda-
pest paprika pancakes, or rum-
pecan ones. - We preferred the
"Israeli Potato and Walnut Pan-
cakes." We don't remember eating
them in Israel, but they are good
anyway (or anywhere).

Four cups hot mashed potatoes
Four eggs
Two tsp salt
One-quarter tsp. white pepper
One-half cup finely chopped walnuts
Two tbls. oil
Shredded lettuce

Combine potatoes, eggs, salt and
Pepper; mix welL Stir in walnuts. For
each cake, spoon one-third cup mix-
ture into preheated well oiled fry pan.
Spread into a 3 inch patty. Brown on
underside; turn and brown second side.
Serve hot garnished with shredded
lettuce.
Yield—about 16 cakes.
