A COOL SUMMER SOUP
Summer days call for refresh-
ing, cool. and easy dishes. Well,
how about combining the refresh-
ing taste of buttermilk, the cool
green of cucumbers, in an easy
way? Try it, and you will get a
cool summmer soup that needs no
cooking. Serve it as a first course
of a summer dinner, or just enjoy
it as a snack. The soup is thick
and satisfying yet it is very low
in calories. Some of you may be
reminded of the Cholodink, which
in Russian cold cucumber soup,
but this one is easier to assemble.
For two servings:
2 cups buttermilk
1 medium cucumber
2 tsps. instant nacre onion soup
2 tsps. onion flakes (dehydrated)
1 tsp. dried dill weed
1 tsp. salt—dash pepper
2 strings of parsley
1. Peel cold cucumber and dice it.
2. Measure two cups buttermilk and
pour into a blender. Add the other n-
gredients, and the diced cucumber.
3. Blend for 3 minutes at medium
speed. Taste and correct seasoning.
4. Serve immediately in mugs or soup
bowls. Garnish with the parsley.
