A HEAVENLY CHEESE

OMELET

Mr. and Mrs. James D. Willen-

Parents of the couple are Mr.

Mrs. Howard D. Willenberg of

Uniontown, Pa.
The bride, the former Estelle

Quick recipes shouldn't taste or
look like you have prepared them
in a hurry. The time and effort
you spent are your own little
secrets. But once the dish reaches

the table it has to look like a
fancy one.
The recipe here proves that this

theory is true. It is a recipe for a
cheese omelet which you can
proudly serve at a small luncheon_
It has a gourmet touch to it—and
yet it is quick, easy, and fun to
prepare.

For 2 persons:
4 eggs
tz tsp. cream of tartar
1/2 tsp. salt
2 tbls. butter or margarine
cup grated cheese
4 tbls. sour cream
1 tbls. chopped chives

PLEASE READ THE WHOLE RECIPE
BEFORE STARTING!

1. Separate the eggs. Whip the egg
white with half a tsp. cream of
tartar. The egg whites should be
stiff but not dry.
2. In a separate bowl whip the egg

y olks together with two
cold water and half tap. salt. Whip
till the yolks become very pale
and look light.
3. Quickly heat an oven-proof skillet
on top of the stove, and melt the
butter. Tilt the skillet so that the
sides are also greased.
4. Fold very gently the egg yolk
into the egg whites. The whole
mixture will have a pale yellow
into the
color. Pour it' gently
skillet. Fry for three minutes or
until the bottom gets just a little
brown.
5. Put the skillet under a broiler
and broil for about five minutes.
The omelet should puff and get
a golden color at the top. Remove
from broiler.
6. Run a knife along the edges to
loosen the omelet. Make a cut in
the middle of the omelet, which
will help you to fold it. Sprinkle
the grated cheese along the cut.
Fold over. Garnish with sour
cream and chives. Serve immedi-
ately.
