Mrs. Miles Jaffe is a co-chairman of the special program, sponsored by the Women's Committee of United Community Services. Headlining the consumer experts as speakers will be U.S. Senator Philip A. More than 1,000 community leaders in the tri-county area are expected to attend, but the general public is invited. The conference theme is "The Age of the Consumer." Pulverize cookies (or wafers, corn- flakes, or graham crackers), till you have one cup full of crumbs. Melt the butter and add to the crumbs together with one tsp. lemon rind. Combine thoroughly. 2. Line the bottom of a spring-form with was paper. Grease very well the sides of the form. 3. Push the cottage cheese through a sieve, or put it In an electric blender. The Idea is to make the cheese smooth without the curds. If you whip It in the blender, don't overdo it because the cheese may turn too watery. 4. Add to cheese, the sugar, flour, four egg yolks, vanilla and two tsp. lemon rind. Mix gently but well. 5. Spread the buttered crumbs on the bottom of the spring form. 6. Whip the egg whites till they are stiff. Add them gently to the cheese and fold. 7. Pour into the spring form and bake in a 350 degree oven for one hour without opening the door. Then turn off the heat and let the cake cool inside the oven for an hour. The cake will puff while baking, but then, when it cools, it will set. 8. When you take the cake out of the oven run a knife around It to loosen it from the form. Let cool and take it out. 9. Serve the cake cold. You may serve it with whipped cream, if you like.
