In Jewish cookery one can find
elements of many different national
cuisines. The Russian Borsht, the
German Sauerbraten, and the Ara-
bic Falafel, to name just a few. We
learned the basic principals of the
dishes' preparation, and adapted it
to our own way of kosher cooking.
Recently I sampled some Poly-
nesian dishes in the beautiful
Trader Vic's restaurant in Beverly
Hills. I liked many of the dishes
which were made of fish, chicken,
fruits and vegetables, and which
were served in a very gracious and
colorful manner.
As soon as I came home I went
to my kitchen trying to produce a
kosher luau. Here is a "pupu,"
and appetizer, made of sole fish. It
can also be served as a luncheon
dish.

2 tblsp. flour
2 tblsp. water

2 tblsp. sesame
seed
1 tsp. salt
011 for frying
I whole lemon

1. Thaw the fillet and cut them into
"fingers," about 3 inches long and 1
inch wide. Sprinkle with salt.
2. Mix together the egg, flour, water,
sesame seed and one tsp. salt. Blend
well so there will be no lumps.
3. In a skillet put oil so It will be at
least one Inch deep. Heat the oil.
4. Put each fish "finger- into the
sesame-batter and cover the fish very
well, from all sides, with the batter.
5. Fry the "fingers" In the hot oil, turn-
ing them around so they get browned
on all sides. The color should be a
deep golden brown.
6. Put on paper towels to drain some
of the oil. Serve hot with wedges of
lemon.
