The Jaffa Orange Recipe Contest
is off to a rolling start. The Jewish
News, co-sponsor of the competi-
' lion, is glad that the judges will be
a nationally known certified home
economist, for as far as the News'
staff is concerned, they all would
rate prizes.

Therefore, we arc printing reci-

pes as they come in to us. The
winning entries will be repeated at
the conclusion of the contest.
The citrus from Israel will be
available on supermarket shelves
in the Detroit area through the
middle of May. Contest deadline
is April 24.
Prizes are a Sony tummy TV,

first; and a Sony cube radio, sec-
ond.
Among the entries submitted are
the following two from Mrs. Nathan
Greenberg of 1a30 E. Court, Flint.
The first, "Orange Goldarlings,"
a re cookies named for Prime

1 tsp. baking powder
tsp. soda

cup flaked coconut
1 egg
cup sugar
In a large mixing bowl, combine flour,
baking powder, salt, soda. Cut in but-
ter, stir in coconut. Add remaining in-
crettionts all at once, stirring with fork
until dough holds together. Drop by
2 inches apart on greased

cookie sheet. Bake at 400' for 10 min-
tes or until golden crown. Store in re-

JAFFAVORITE ORANGE CUPCAKES
1 cup Jaffa °rang,' tsp. cinnamon
juice
1 tsp, nutmeg
2 cups all purpose
tsp. cloves
flour
1.2 cup butter
2 tsp. baking
2 eggs
powder
f cup sugar
tsp. soda
to cup raisins
Line 12 muffin cups with paper bak-
ing cups, or grease 12 muffin cups. In
torte mixing bowl combine dour with
baking powder, salt, soda and spice.
Cut in nutter until crumbly. Add all
other ingredients. Mix. Fill muffin cups
full. Bake at 2S0' for 30 minutes,

tions are as follows:

JAFFA ORANGE TORTE
Buy a round sponge cake 9 inches
in diameter, or an equivalent square of
sponge cake.
Several hours before serving prepare
the following Orange Cream: In a dou-
ble boiler, cook until thick the follow-
ing ingredients:

tfs cup sugar
1 egg yolk
t,S cup Jaffa orange Juice
1 tbsp. grated orange rind
1 tbsp, all-purpose flour
Cool and store in refrigerator until
ready to use.

Also prepare oranges for garnishing
as follow:
Carefully peel 1 Jaffa orange, so that
you have the peel without any white on
it, and shred into long, thin pieces
about 1/16 inch thick. Boll 1 cup of
water and % cup sugar for 5 minutes,
turning heat to a simmer after It comes
to a boll. Add the orange shreds and
boil 10 minutes. Meanwhile segment the
above peeled orange, and two more,
carefully removing all the white mem-
brane and the seeds. Pour over the hot
syrup, cool. Then cover the dlsh and
chill.

Orange-Grape Sauce

"4 cup Jaffa orange juice
a* cup water
Boil 10 minutes, then acid 1 cup seed-
less grapes and 2 cups diced and pitted
oranges. Cook 5 minutes longer. Cool.

Cup Water

I small onion grated
3 tbsp. minced green pepper
1 tbsp. Worcestershire sauce
1 tsp. salt
tsp, black pepper
2 tbsp, tomato catsup
1 egg, slightly beaten
1 Jaffa orange, peeled and
sliced thinly
Sauce
Combine all the ingredients, except
orange slices and sauce. Mix very well.
Form into a loaf and place in baking
dish. Decorate the loaf with the orange
slices. Make the sauce and pour half of
it over the loaf. Bake at 3110 degrees F.
for 1 hour, basting the loaf several,
times with the rest of the sauce. Serve
with the gravy formed.
Serves 6.

Sauce
,2 cup brown sugar
3 tbsp. lemon ;nice, or enough
juice to dissolve the sugar
into a thin sauce
1 tsp. prepared mustard
2 tsps. Worcestershire sauce
c tsp. tarragon
Blend all ingredients and use as di-
rected above.
