Our unique holiday, Passover,
presents us with an abundance of
incomparable recipes. Not only
are they full'of the special Jewish
flavor — they all are also made
without any flour. Our great-grand-
mothers came up with absolutely
kosher le-Pesach cakes, pies,
snacks, sandwiches and even
noodles.
' I still remember my surprise, as
a child, seeing "noodles" in my
chicken soup at a Passover meal.
My mother assured me that those
"egg-noodles" are okay, and are
actually made out of eggs. She
also taught me the secrets of pre-
paring Passover blintzes from the
same "dough." And to tell you the
truth, those noodles and blintzes
for Passover tasted better on the
holiday than the regular ones, all
, year round.
For 12 blintzes, or for 6 servings
of noodles:

3 eggs
cups water
6 tbls. potato
starch
Ili: tsp. salt
