The modern Jewish mother is a
very busy person. She has many
obligations to fulfill for her family
and her community. These activi-
ties leave only a small amount of
time for the kitchen. And yet, she
' still wants to serve good nourishing
' dishes which capture the special
way of Jewish cooking. For those
busy Jewish mothers we have a
quick, satisfying, old-time sweet-
and-sour borscht.
QUICK CABBAGE BORSCHT
4 cups water
1 large onion
1 boullion cube
2 tbisp. oil
2 tblsp. catsup
1/2 lb. ground
2
tblsp. brown sugar
meat
11/2 tsps. salt
1 can sauer-
kraut (16-oz.) 1/2 tsp. black pepper
1. Chop the onion. Heat the oil in a big
saucepan and fry the onion pieces
till light brown. Add the ground
meat and fry it with the onions till
browned.
2. Into same saucepan add the can of
sauerkraut (also the Juices). Add 4
cups water, 2 tblsp. catsup, bouillon
cube and sugar.
3. Bring to a boll, reduce heat and let
simmer for 15 minutes. Taste and add
salt and pepper.
4. Continue cooking for another 15 min-
utes on low heat. Serve hot.
5. This is quite a thick borscht. If you
like more liquids—you may add 2
more cups of water, but remember
to taste and to correct seasoning.
