In a large mixing bowl dissolve yeast in water and add milk, sugar, salt, coloring eggs, soft butter and, and about half of the our. 2. Mix until smooth and add vanilla and grated lemon rind. Add more of the remaining flour and knead till you can handle the dough easily. Knead about eight minutes until the dough is smooth and elastic. 3. In a clean bowl, put few drops of oil and grease the whole bowl. Place the dough in the greased bowl, turning It once to grease the top of the dough ball. Let stand in a warm place about one and a half hours until the ball doubles. 4. Punch down, knead lightly and divide into two. Make two small balls and then roll them between your palms to make two ropes. Twist them around each other and then form into a circle. Pinch the ends to seal and to give the cake a round shape. (You may give this cake any shape you like.) Put on greased cookie sheet and let it rise again, for about 50 minutes. 5. Before Inserting In the oven—brush top with some milk. Heat oven to 375°. Bake the cake for about 25-30 minutes. When cool, top with icing and garnish with chopped almonds, if you wish. ICING: Beat egg - white with confection- ers' sugar.
