I. Clean the gizzards very well in cold
water. Dry on paper towels..

2. Cut the onions into small cubes.
Heat a quarter cup of oil in a big
pot. Brown the onions in the hot oil
until just lightly . brown.

3. Add the gizzards to the 0111011 and
brown together over medium heat
Add the garlic. salt, pepper and
paprika. Mix and cover. Let cook for
a

don't get burnt. This dry cooking will
give the goulash a nice brown color.

4. Add water. Lower the heat. Cover
and let cook for another two hours. •
Keep an eye on it and add some
water if necessary. Serve hot with
rice or potatoes.

Everyone is complaining about
the rising cost of living, but nobody
does anything about it . . . Well,
you can do something! You can
balance your food budget by rely-
ing on old-time Jewish recipes. As
you probably know, we Jews were
never big - gevirim" (rich men),
and yet there were big families to
feed. A Jewish mother would cook
up a dish made of the lowest-priced
cuts of meat. Nevertheless, the re-
sult was always a delicacy which
lingered forever in the memories
of her children.
Here we offer a recipe for a
gizzard-goulash (chicken gizzard).
At 45 cents a pound, you could
feed four persons for $1.50. And
how about the taste? Let me tell
you this: when I prepared this
goulash my young children, who
