Garnish with bits of olives, pimento, or parsley. You can also sprinkle red paprika on top. s A DESSERT FOR WAISTLINE WATCHERS Everyone should have a receipe for a low-calorie dessert. It is good and useful when you want to hap- pily end a rich meal. It is also handy when you crave a sweet dessert after a diet meal. The dessert is made out of rhu- barb, which the dietitians tell us has almost no calories. In many slimming diets, rhubarb is consid- ered a "free" food. Here it is "dressed up" with other ingredi- ents to give it body, make it hand- some and very tasty. 2 lbs. rhubarb 2 cups of water 6-8 saccharin tablets 2 Tbls. unflavored gelatin 2 tsp. cherry extract 4 drops red food coloring 1. Clean and , cut up rhubarb to one Inch pieces. 2. Cook the rhubarb in 2 cups of water about 12 minutes over medium heat or until tender. 3. Add the saccharin and mix gently till it dissolves completely. Taste, and add more tablets if you prefer it sweeter.' 4. Soften gelatin in 14 cup of cold wa- ter. Add to hot rhubarb, continue heating till dissolved, for about 3 minutes. 5. Remove from heat and let it cool slightly. Add cherry extract and feed coloring. 6.
