1. Have all fat skimmed off the soup.
Soften the gelatine in one-quarter
cup cold water. Add to soup and heat
for five minutes till all gelatine dis-
solves in the soup.
2. Measure half a cup of the soup and
pour it into a 6-cup mold to cover the
1 mold's bottom. Chill till almost set.
Chill separately the rest of the soup.
3. In the meantime prepare the cup of
cubed chicken meat, slice the eggs.
and cut the pimento into strips and
the olives Into pieces.

4. When the soup in bottom of mold is
almost set, arrange a nice pattern out
of the pimento, olives, parsley and
several slices of egg.
5 When the rest of the soup is partially
set. add to it the cold cubes of chick-
en meat and the remaining egg slices.
Pour into the mold. Chill for at least
four hours.
6. Before serving, unmold by dipping
the mold into hot water for 10 sec-
onds, then run a knife along the edge
and invert the mold of a serving plat.
