During the spring and early
summer months, this column has
refrained from furnishing recipes
for hot meat dishes, in the belief
that my readers preferred light
dairy and vegetable dishes during
the spell of warm weather. I am
now offering a savory meat dish
which is easily digestible even in
August — Veal Ragout to be fol-
lowed by a Lemon Chiffon Pie.
