Here is another easy-to-prepare
summer dish that requires a mini-
mal amount of hot-stove cooking
and furnishes a maximal supply of
nourishment—A Spinach Borsht to
be followed by a 'Kedgeree, a fish-
rich-and-egg dish for which canned
fish may be used to save yourself
the task of boiling fresh fish dur-
ing the warm July days.

Spinach Borsht
1 lb. of spinach
1 small onion minced
1 teaspoon of salt
1 teaspoon of sugar
juice of one lemon
1 egg
172 cup of sour cream
5 cups of water
Wash spinach well. Chop very fine
with minced onion, add water, salt,
sugar and lemon juice and boil 20 min-
utes. Remove from heat. Beat egg very
well and stir; while stirring, slowly
add the borsht to the egg. When cool,
mix well with_ sour cream and refriger-
ate. Garnish each plate of soup with
minced hard boiled egg and diced cu-
cumber using one hard boiled egg and
one-quarter cucumber for all.
Kedgere
1 cup of hot cooked rice
1 cup of boiled or canned fish, flaked
3 hard cooked eggs, minced fine
3 tablespoons of melted butter
teaspoon of salt
light cream to moisten
Heat above slowly and heat through.
